Diabetes occurs when the body produces little insulin, creates a resistance to it, or both. But if it is already annoying to deal with this disease, looking for foods that we like to fight and enjoy the food is easy.
- 3 eggplants
- 1 green pepper
- 2 red peppers
- 1 tomato
- 1 onion
- 2 cloves of garlic
- Some leaves of mint
- a handful of black olives without a bone
- 1 natural yogurt
- salt and pepper
- oat milk or cow’s milk
- olive oil
Step by step
1.- We cut the eggplant in half and in its “meat” we make some transversal cuts, so that it cooks better in the oven. We put the halves of the eggplant, looking up on a baking tray, next to the red and vede peppers, the tomato, and the onion peeled and cut in half. Sprinkle with a little olive oil and put in the oven previously heated to 200ºC. We roast all the vegetables for about 30 minutes.
2.- Once roasted, turn off the oven and let it rest inside, for two more hours. So that the vegetables sweat and release all their juice
3.- After the time, we peel them. Peppers and tomatoes are very easy to peel. With the same fingers we can remove its shell to strips. The onion is already peeled and the flesh of the eggplant will be separated from its shell, which is harder, with the help of a spoon. The broth that could have released the vegetables, we keep it. We will need it for later.
4.- We put all the vegetables, cut into large pieces, in a blender or licadora. We add the broth that has been released, the cloves of garlic, some leaves of mint, the skimmed yogurt and the black olives. We crush all the ingredients until a homogeneous mass is obtained
5.- Once we have obtained it, add a pinch of salt and freshly ground black pepper. And if the mixture has become too thick, it will be most likely, we also add a little oatmeal (or soy) or whole or skim milk.
6.- We mix well and serve in a glass. You can decorate with some slices of black olives and with a mint leaf.
